Gross revenue is not profit. Here's the real chain.
A vendor day has four numbers that matter.
Traffic. How many people walk past you, not how many attend.
Conversion. What share of them buy. A drink at a hot outdoor event converts far better than at an indoor craft fair.
Average ticket. One drink, or a drink plus an add-in.
Cost to be there. Vendor fee, product, labor, fuel, ice.
Revenue is traffic × conversion × average ticket. Profit is what's left after the cost of being there. Vendors who only watch revenue can work a huge day and still lose money on a big fee.
